Yes...but either in "downtown" Las Vegas (just before Freemont Street) or quite a bit south of Mandalay bay (pretty far actually!).
Depending on where you are on the Las Vegas Strip...here are my suggestions:
West side of Las Vegas Blvd & 15 fwy:
Chinatown....Bank of America branch: Spring Mountain Rd a couple blocks West of Las Vegas Blvd (Open on Saturdays...not Sundays).
East side of Las Vegas Blvd:
Bank of America branch: Desert Inn Rd & Maryland Parkway (Open Sat)
Wells Fargo Branch: Howard Hughes Parkway inside the Howard Hughes Center...located in the middle the complex (many buildings) and situated between Flamingo Blvd and Sands Blvd (name changed maybe?...it's the road at the intersection of las vegas blvd and Wynn Resorts) Open Sat.
Citibank: Located on Paradise rd... also between Flamingo and Sands...basically a couple hundred yards north of Flamingo on the right hand side of Paradise Rd (same center at the Firefly Cafe and Ruth Chris' steakhouse restaurants).
ON las Vegas Blvd...
Wells Fargo has a branch that is a little difficult to park at...but ON Las Vegas Blvd...a block or so before you get to Freemont Street (going north). It's easy to miss, on the left hand side. Not sure if it's open on Saturday/Sunday though.
Bank of America...has a branch..also downtown by Freemont street...ONE block before it...on "Bridger & 4th" I believe...it's a one way street at that point so depending on where you turn left...you may have to circle the block to park. Open on Saturday not Sunday.
The only ACTUAL "full" branch I am aware of being open on a Sunday is OFF Las Vegas blvd...at the corner of Warm Springs Rd and Maryland Pkwy inside the grocery store...but FULL-service branch!!!

Wells Fargo has HQ on Howard Hughes Blvd. just a few blocks away.
Bank of America is also within a block of Las VEgas Blvd.
